1/4 cup sugar
51/2 cups sifted all-purpose flour
2 tablespoons vegetable oil
2 well-beaten eggs
1 egg yolk
Dissolve the yeast in 1/2 cup of the
water. Add the saffron, salt, and 1
tablespoon of the sugar. Let stand
in a warm place for 15 minutes.
In a large mixing' bowl combine
the flour, yeast mixture, remaining
sugar, the oil, and the 2 eggs. Add
just enough lukewarm water to make
a soft dough. Knead on a lightly
floured board until satiny. Place in
a large greased bowl, turn the
dough completely over, cover the
bowl with a cloth, and let the dough
rise at 85 degrees F. until double.
Punch down, and remove about V2
cup of the dough. Shape the rest
into two high round loaves some dis-
tance apart on a greased cookie tin.
Roll the reserved piece between the
palms of the hands into a long, thin
rope, cut it in half, and press each
half around the rim of each loaf, like
a crown. Cover with a cloth and let
rise again until almost double. Brush
the surface of both loaves with the
egg yolk, and bake at 350 degrees
F. about 45 minutes, until a rich
brown. To be certain the loaves are
completely baked, turn one over. The
bottom should be a medium brown.
Cool the loaves on racks. This makes
two medium-sized loaves.
PAN-SMOTHERED CHICKEN WITH
GRAVY AND RICE
4 rounded tablespoons all-purpose
flour
1/2 teaspoon salt
1 18 teaspoon black pepper
1 cut-up broiler-fryer
6 tablespoons oil or chicken fat
I cup chicken soup
2 cups cooked rice --
Combine the flour, salt, and pepper
in a small bag. One at a time, shake
the pieces of chicken in the flour to
coat them evenly. Use all the flour
mixture. Heat the oil or chicken fat
in a large skillet. Add the chicken
pieces and brown on all sides over
medium heat. When the chicken is
a rich brown, add the soup, bring
to a boil, cover the pan, then lower
the heat and simmer until the
chicken is tender. Allow about one
hour for the total cooking time.
Serve the chicken in a deep platter
with the gravy over it, and pass the
rich separately. This amount serves
four.
HONEY-PECAN CAKE
1/2 cup vegetable shortening
1 cup sugar
3 eggs
2 /3 cup honey
1 teaspoon baking soda
11/2 teaspoons double-acting baking
powder
1 teaspoon salt
1 teaspoon ground cinnamon
1 /2 teaspoon ground cloves
. 4 / 3 cup cold strong coffee
1 cup pecans, chopped medium
fine
1 /2 cup seedless raisins, cut in
half
Cream the shortening, sugar, and
eggs until light and fluffy. Beat in
the honey. Sift together the flour,
baking soda, baking powder, salt, and
spices. Add to the batter alternately
with the coffee, stirring only enough
to blend. Fold in the nuts and
raisins. Poured into a greased and
floured 9x32x2 inch pan, and bake at
350 degrees F. about 50 minutes,
until a cake tester inserted in the
center comes out dry. Remove from
the pan, and cool on a rack,
