ASPARAGUS A LA RUSSE
2 teaspoons butter
2 teaspoons grated onion
1 tablespoon white vinegar
:A4 cup dairy sour cream
salt and pepper to taste
I lb. cooked fresh. or 10-oz. cooked
frozen asparagus
cup chopped. blanched almonds
3 tablespoons fine, dry bread
crumbs
In a small saucepan melt the butter,
add the onion, and cook slowly until
the onion is soft but not browned.
Add the vinegar and cook over me-
dium heat three minutes. Remove
from the heat and stir in the sour
cream, salt. and pepper. Arrange the
asparagus in a single layer in a well-
buttered shallow baking dish which
can be brought to the table. Pour
the sour cream sauce evenly over the
asparagus, and sprinkle the almonds
and bread crumbs evenly over the
sauce. Bake at 350F. until hot, about
15 minutes. Serve in the same dish.
This amount makes three or four
portions.
ASPARAGUS CASSEROLE
3 tablespoons butter
3 tablespoons all-purpose flour
1 1 2 cups milk
cup grated American cheese
1 lb. fresh, or 10-oz. frozen aspara-
gus, cooked California method
cup sliced, stuffed olives
4 hard-cooked eggs, sliced
l2 cup fine, dry bread crumbs
salt and pepper to taste
Melt the butter in a saucepan, stir
in the flour, and cook and stir until
the mixture bubbles. Remove from
the heat, and gradually stir in the
milk. Return to the heat, and cook
and stir until smooth and thickened.
Gently combine with the cheese, as-
paragus, olives, salt, and pepper. Place
half this mixture in a buttered 11-
quart casserole, cover with a layer of
half the eggs, and sprinkle half the
bread crumbs evenly over the eggs.
Repeat. Bake, uncovered, at 350F.

bling. This amount serves four.

Why are the Tefillin re-
moved in the midst of the

service on the first of the
month (Rosh Chodesh)?

Basically, the Tefillin are not
donned on the Sabbath or on a
holiday. The reason for this is
that the Tefillin are considered
a "sign" of the Almighty's pres-
ence and the Sabbath itself is
a sign, as is the joyous spirit of
a major festival. The basis of
taking off the Tefillin before
the additional service (Musaf)
which is appended to the daily
morning service on the first of
the month, is regarded by many
to be the fact that the prayers

of sanctification (Kedushah)

which are recited in this addi-
tional prayer carry the implica-
tion of a crown (Keser) which
is the same meaning as is im-
plied by the Tefillin. The Zohar
(Midrash - ha - Neelam, Shir ha-
Shirim) implies that on a Sab-
bath, a Festival or on Rosh
Chodesh, the Almighty himself
is regarded as adorning himself
with adornments which are
comparable to Tefillin—hence
there is no need for the Jew to
put on Tefillin on these days.
The reason for which the Tefil-
lin on Rosh Chodesh are not
taken off until before the Musaf
service is the fact that with the
Musaf service the Crown of Joy
is felt and thus the Tefillin are
not needed as a symbol of His
nearness.
