GOOSE STUFFED WITH FRUIT
1 goose, about 12 pounds evis-
cerated weight
2 cups drained, pitted cooked
prunes
6 medium apples, peeled, cored
and quartered
1 teaspoon salt
1 ,14 teaspoon pepper
1 /4 teaspoon ground ginger
Have the goose prepared for stuff-
ing, cut off the neck at the body,
but leave on the neck skin. Remove
as much fat as possible from the
cavity and under the skin. Reserve
eight of the prunes for garnish and
cut the rest in half. Mix the apples
with the prunes. Combine the salt,
pepper, and ginger, and -spread this
mixture inside the goose and over
the skin. Fill the cavity loosely with
the fruit, fasten with skewers, and
lace with heavy thread. Loop the
thread around the ends of the legs
and tie -them together. Fasten down
the neck skin. Prick the entire sur-
face of the goose with the prongs of
a fork. Place, breast down on the
rack of a roasting pan, and roast
uncovered at 325 degs. F. for three
hours. Turn breast up and continue
roasting until tender. The total cook-
ing time should be about 25 minutes
per pound. As the goose cooks re-
move the fat that accumulates in
the pan. To serve, remove the skew-
ers and string, place the goose on
a platter, and garnish with the re-
served prunes and parsley. This
makes about eight servings..
POTATO LATKES (PANCAKES)
2 large potatoes
2 teaspoons grated onion
2 eggs, beaten light
2 tablespoons all-purpose flour
1 /2 teaspoon baking powder
teaspoon -salt
1 /4 teaspoon pepper
shortening for frying
Peel the potatoes. Grate, or dice
and whirl in the blender until. grat-
ed. Place in a strainer and let the
liquid drip out. Put the pulp in a
bowl and add the onion and the
eggs. Combine the flour with the
baking powder, salt, and pepper,
and add. The amount of salt and
pepper suggested is for lightly sea-
soned pancakes. More may be added
to taste. In a large skillet melt
enough shortening to cover the bot-
tom one-fourth inch deep. Chicken
or goose fat, vegetable oil, or vege-
table shortening indy all be used.
Heat the fat until drop of batter
added to it sizzles. Drop in the bat-
ter by heaping tablespoons and flat-
ten slightly. Fry over medium heat
until the bottom of the latkes are
a deep, golden brown. Turn over
and brown the other side. Place the
fried pancakes on paper towels for
a few seconds to absorb any excess
fat. To keep the fried pancakes hot,
they may be placed in a 250 degs. F.
oven on a brown-paper lined pan for
a short time. This amount makes
from 10 to 12 pancakes.
LEMON ICE (JIFFY METHOD)
1 6-oz. can frozen lemonade
concentrate
2 cups water
2 egg whites
1 /4 teaspoon salt
Combine the lemonade concentrate
with the water, and pour into a
freezing tray. Freeze until firm.
Beat the egg whites and salt until
very stiff. If a deeper color is desir-
ed for the ice, add a few drops of
yellow food coloring to the whites
before beating. Break up the frozen
lemonade into a chilled bowl, and
beat quickly with a rotary or elec-
tric beater until the mixture is
fluffy and completely free of icy
bits. Work fast to prevent it from
melting. Quickly fold in the egg
whites, return to the tray, and freeze
again until firm. Place the tray
where the ice will not freeze too
hard. The ice should be just firm,
to be at its best. This amount serves
5 to 6.
