1 lb. broiled poultry, calf's, or
baby beef liver
3 hard-cooked eggs
about 1/4 cup chicken fat
1 finely diced, medium-large
onion
salt and pepper to taste
Remove all membranes from the
liver. Slowly cook the onion in
three tablespoons of the fat until
soft, but not browned. -Grind or
chop the liver, the onion, the fat
in which it was cooked, and two of
the eggs until very fine. Add salt

and pepper to taste, and just
enough additional chicken fat to
make a smooth paste. Chill. At
serving time mound on lettuce in
individual bowl as a spread. Chop
the remaining egg fine and sprinkle
over the liver. This amount serves
5 or 6 as an appetizer, with about
a half cup in each portion.
