MENDELSON'S RESORT ,Phone 511, Ben Tiitel,

of Jewish Cooking

Jennie Grossinger is a name
to be reckoned with. The resort
bearing the Grossinger name
became famous primarily for
two things: entertainment and
food.
Therefore, the new Jennie
Grossinger book, "The Art of
Jewish Cook-
ing," just pub-
lished by Ran-
dom House,
calls for more
than passing
notice.
Mrs . Gros-
singer's cook-
book contains
more than 300
recipes a n d
menus per-
fected in the
Jewish - style
cooking by
t h e Catskill
resort's popu- Jennie
Grossinger
lar hostess.
The many illustrations in the
book are by Lorraine Fox.
There is a fine explanatory
essay on Jewish-style cookery,
by Jennie Grossinger herself,
in the form of a foreword to
the book. She points out that
the Jewish dishes, which have
been drawn from many lands
in which Jews have resided,
have found their places on
American menus.
Mrs. Grossinger indicates
where some of the dishes origi-
nated—pirogen in Poland, ge-
filte fish in Germany, goulash
in Hungary, etc. She also makes
valuable comments on Jewish
holiday dishes.
Of special interest is the in-
troduction to the book by her
son, Paul Grossinger, whose
article is appropriately en-
titled "Mom's in the Kitchen."
He writes as "an ardent ad-
mirer" of his mother's cookery.
"Mom is past the crying-over-
the-onions and the dish-washing
phases of cooking," Paul writes,
since Grossinger's "now has a
pretty good-sized crew of chefs
and bottle-washers to handle
such matters."
Paul describes the pride
taken by the Grossinger women
in their activities and the back-
ground of their cooking skills.
He makes the pertinent point
that "a Jewish cookbook can
be almost considered a history
book—a history of 5700 years
of happiness and sorrow. Just
one instance—the latke (pan-
cake), which the wives of she
soldiers of the ancient hero
Judah Mace a b ee hurriedly
cooked for their men behind
the lines, as they united to
drive the Syrians out of their
land."
This may or may not be the
origin of the latke, but cooking
can, nevertheless, be viewed as
an historical aspect in the life
of a people. Paul's warm con-
clussion to his introduction is
"in Mom's own words: 'Hearty
appetite!' "
Mrs. Grossinger's cookbook,
besides providing guides for
temperatures, measure-
ments and other cooking re-
quirements, has recipes for all
the Jewish holidays; for soups,
fishes, meats, poultry, cholent,
kreplach, kugels, tzimmes, sal-
ads, pickles, strudel, desserts
and dairy dishes as well.
Jennie's cookbook will be
well received. There is no doubt
about that. Even the reading
of the recipes and menus makes
the reviewer's mouth water.
