Miss Okrent, who attended
the University of Omaha and is
a graduate of the University of
Nebraska Medical school, is an
x-ray technician.
Mr. Schecter, now a resident
of Council Buffs, Ia., where he
is sports editor of the Non-
pareil, is a graduate of the Uni-
versity of Michigan and a
member of Sigma Alpha Mu
fraternity:
The couple is currently visit-
ing in Detroit with . the Okrent
family. A November wedding
is planned.

Trim the tongue before cook-
ing. Be sure to cover the tongue
with cold water and bring to a
boil. Skim then add remaining
ingredients. Cook over moder-
ate heat, well covered, for 45
minutes. Uncover and test with
a fork: If tender, let cool in
the liquid. If more cooking is
required, add a tablespoon of
lemon juice or vinegar to hasten
the process. Tongue must be
tender enough to pierce the
thick part with a fork. Drain
well. Slice diagonally into Vs
inch thick slices. Dip slices in
beaten eggs then in flour and
fry in hot fat .till nicely browned
on both sides. Serve with a
parsley garnish and pass the
horseradish or tomato ketchup.
Serves 8.
Variation: Dip slices of boiled
tongue in the following batter:

2 eggs, beaten well
teaspoon salt
A dash of white pepper
lk cup sifted flour
Vegetable shortening or oil.
