for the Festival of Freedom,
Passover! Get out your pads and
pencils, ladies, and jot down all
the helpful, hints you can recall.
Novices, especially, will have
to remember that all fresh fruits-
and vegetables are used in Pass-
over menus. Grains and legumes
like peas, beans, even green
ones, are prohibited, along -with
leavening of all kind (-like yeast,
baking - powder a n d baking
soda). Passover foods that coine
in packages, glass jars or bot-
tles, are labelled "For Passover
Use." Read your labels care-
fully.
If you remember with gusta-
tory delight the special Beet
Preserves Granny used to pre-
pare for Passover, here the
recipe. Be sure to have some on
hand for just that EXTRA
touch.
Passover Beet Preserves
3 pounds fresh beets
1 pound honey -
1 pound sugar
3 tablespoons ground ginger,
1 /2 pound blanched slivered
almonds
-
Cook the beets in cold water
to cover until tender. Be-lure to
leave at least 2 inches of stem
on beets to prevent "bleeding,"
resulting in tasteless as well as
pale beets. Drain. Slip skins as
soon as cold enough to handle.
Cut into strips or dice. Bring
honey, sugar and ginger to a
boil" over moderate heat in a
large 'enough pot or saucepan
to hold the beet bitS. Drop pre 7
pared beets .in gently and cook
over low heat -until the syrup
has been almost .completely ab-
sorbed, aPproximately 30 min-
utes after. reaching the boiling
stage. DO NOT STIR the mix-
tore during the cooking process,
but SHAKE THE POT froth'
time to time to prevent sticking
or scorching. Turn off heat, stir
in the slivered almonds lightly
using a fork for best results.
Turn into jelly glasses or a stone
crock. Store away from light in
a moderately cool place to pre-
vent dis6oloration.

eggs separated
1'4 cup lukewarm water
1/4 cup Passover Peanut Oil
i8 teaspoon salt
1 package Passover Sponge Oake
Mix
1 teaspoon grated lemon rind
3 A cup coarsely chopped nuts (al-
monds & walnuts preferred)
4
Let eggs stand at room tem-

at 375°F, or till a golden brown
on top. Remove when cold to
any type of container with lid
for storing till wanted.

VARIATION:. Just before
serving time, spread a tiny bit
of frosting on top of each cookie
and insert a bit of nut.
