Holidays, especially when Rosh
Hashanah and Sabbath dishes
are on the agenda this week,
let's not forget the carrot and
potato tzimmes. Just when this
particular kind of tzimines be-
came associated with Rosh Hash-
anah is lost among the wander-
ings of. our people.
The very word "Tzimmes"
has gone into the folk sayings
and folklore of our people the
world over. "Making a Tzitn-
mes over somebody, or some
occasion" is a commonplace ex-
pression implying, in a good na-
tured sort of way, "making a
fuss over him, her, or it!", a
bit of exaggerated praise.
CARROT AND POTATO TZIMMES
5 large carrots, scraped and
sliced thin (about 4 cups slices)
5 medium size potatoes, cut into
cubes
3 medium size sweet potatoes, cut
into 1-inch thick rounds
1 teaspoon salt
2112 to 3 pounds brisket of beef
1 ,/2 cup brown sugar or honey
(more to taste)
Cold water to cover
1 small onion, optional
2 tablespoons schmaltz
2 tablespoons flour
Prepare the vegetable s,
sprinkle with salt and let stand -
in cold water while searing the
meat in a heavy pot in which
