Beat the eggs until they are
very light. Add chicken fat,
matzoh meal and salt. Stir well.
Farm into balls about one inch
in diameter. Make one ball and
cook it 15 minutes before
making the rest. If the ball
falls apart, add -a little matzoh
meal to the -batter. Form the
rest of the balls and place them
in the refrigerator for one
hour. Then cook them rapidly
in salted boiling water for 15
minutes and serve with the
soup.

Varenikas
2 cups ground cooked .meat
2 cups mashed potatoes
2 well beaten eggs
cup matzoh meal
1 teaspoon salt
Grind the meat and add fried
onions, salt and pepper to taste.
To the mashed potatoes add two
well beaten eggs, salt and pep
per to taste and matzoh meal.
Mix well and shape the dough
into balls. Scoop out a hole in
the center of each ball and fill
with the chopped meat. Roll the
potato dough over the opening
and flatten the balls lightly.
Dip them in beaten egg then
in matzoh flour and fry in
chicken fat until golden brown.
'Serve with the roasted duck,
and with cold slaw.
