PASSOVER COOKERY QUIZ
Question: What vegetables are
permitted during Passover
Week?
Answer: All greens for sal-
ads; root vegetables like pota-
toes, sweet potatoes, beets, car-
rots, parsnips, onions, etc. Peas,
Beans, other legumes and
grains are prohibited. Green
Beans are not used during this
holiday week.
Question: Can baking powder
be used for Passover baking
Answer: No. All kinds of
leavening is prohibited.
Question: Are canned fruits
and other canned goods per-
mitted?
Answer: Canned goods for
Passover use are marked plain-
ly. Be sure to read labels care-
fully.
Question: Should all Passover
Meals be Fleishig?
/ Answer: Not in this day and
age. Dairy items are specially
prepared for Passover Use and
marked, accordingly. Milchig
Meals can be most pleasing,
nourishing and attractive. A
little ingenuity in meal-plan-
ning is necessary and advisable.
Question: What about baked
goods like cakes, pies and
cookies?
Answer: Consult your .favor-
ite Jewish cookbook for sug-
gestions—there are very many
recipes for light-as-a-feather
cakes, pie crusts, and various
cookies without breaking tra-
dition.
Question: Is candy forbidden
for Passover?
Answer: Not these days when
commercial candies of various
kinds are on sale at Passover-
Time. (Besides, some fine can-
dies can be made at home in
almost any type of kitchen.)
Look for the Passover Use La-
bel on Candy Box. Make some
at home, too. See following
suggestions.
Question: Are soft drinks per-
mitted during Passover?
Answer: Yes, indeed. Sodas,
gingerale, etc., are marked
plainly. Read Labels. Wines of
several brands are also marked
For Passover Use.
KNAIDLACH
Allow 1 egg for 1/3 cup Matzo
Meal. For each cup of Meal add
3 ,4 teaspoon salt, and a dash of
ground nutmeg, cinnamon or
, ginger if you like. Beat yolks
of eggs and stir in the Matzo
Meal gradually till combined,
free of lumps. Beat egg white
stiff brit not dry and fold in
lightly. -Let stand in the refrig-
erator for about 2 hours before
forming into small balls or
drop from a teaspoon into rap-
idly boiling salted water. Cover
and cook over reduced heat 10
minutes or till Knaidlach rise
to top. Skim out and add to
clear-soup just before serving
time. One cup Matzo Meal and
3 eggs yields approximately 24
small Knaidlach.

PRUNE FILLED KNAIDLACH
(A dessert)

8 medium size potatoes, diced
Water to cover
1 teaspoon salt
4 eggs
V2 cup each Matzo Meal and Matzo
Cake Meal
% cup melted shortening (schmaltz
preferred)
15 soaked and pitted prunes
15 blanched almonds
lz cup fine granulated sugar
1/4 teaspoon cinnamon

Cook diced potatoes in salted
water till tender enough to
mash easily with a fork. Drain
well and mash thoroughly.
Make a depression in the center
and add one egg at a time,
beating after each addition.
Add a little of the Matzo Meal
mixture while beating till com-
bined. When all eggs and Meal
have been blended with the
potato, add about" 2 tablespoons
of the hot melted shortening
and mix once or twice. When
cpol enough to handle, form
into balls the size of an apple
and place on a platter. Bring
about 2 quarts of water to a
boil. in a large saucepan. While
water heats to boiling point,
make a depression in each of
the balls, place a prepared
prune in center and tuck an
almond in, Bring the mixture
tightly around the prune filling
and drop each into the boiling
water in turn. Cover pot partly
to permit escape of steam and
keep at a gentle boil for 10 to
12 minutes or till dumplings
begin to float • on top. Skim out
carefully with a perforated
spoon. Roll each in a bowl
containing sugar and cinnamon
and arrange on a cookie sheet
or in a shallow baking pan.
Drizzle remaining melted shor-
tening over each once or twice
during the baking period, 12
minutes at 375 degrees F. or
till lightly browned. Or, slip
under broiler flame to brown.
Serve with applesauce, stewed
rhubarb and berries, or a wine
saiice. Yields 15 Knaidlach for
Dessert.

Cardinal Scores Anti-Jewish Bias As Un-Christian

TORONTO, (JTA)—An emi-
nent Catholic churchman here
has declared that -no one who
hates Jews "can rightly call
himself a Christian." James-
Cardinal McGuigan, writing in
his Saturday column "Thoughts
For Our Times" in the Toronto
TelegLam, warned against the
tendency to feel superior on the
part of some Northerners in
the face of the segregation
struggle in the Southern states
and asked how many of those
who felt so had a better record
on the question of Negro, Jew-
ish, or "foreigners" rights.
Cardinal McGuigan wrote, "It
is of prime importance in this
matter to be really honest with
ourselves. If there is no prob-
lem with the Negroes, what do
you think of 'foreigners'? Or, if
you are a Christian, what•do you
think of the Jews? Do not de-
ceive yourself with distinctions
about good ones and bad ones.
Christ knew that there were
good Jews and bad, yet He still
loved them all enough to be-
come one Himself, and to die
for them and for us; and no one
who nurses for a hatred for any
Jews, good or bad, can rightly
call himself a Christian."
Cardinal McGuigan also dealt
with the matter of so-called
jokes about races and religions.
Conceding that some of these
stories contain real humor and
affection, he nevertheless scored
those "about Jews (or Protes-
tants or Catholics) behind the
scenes stirring up the world's
troubles for their own benefit.

LONDON' (JTA) — Reflecting
the grave anxiety of the British
Jewish community over devel-
opments in the Middle East, the
Board of Deputies of British
Jews reiterated a plea to the
British government to "provide
Israel with defensive arms to
withstand threatened aggression
from its Arab neighbors." The
call, incorporated into a resolu-
tion adopted unanimously • at a
meeting of the board, insisted
that "this step was essential to
peace and stability in the Middle
East."

It is good to look back down the road we have travelled from the first of

all Passovers. A long road, a hard road, it called for courage, endurance

and ,faith.

It called for each to take up his burden and resolutely stride out hii

appointed distance.

The end is not yet. Much of , our journey is still to be made. But when

we look back, and see how far we have come, we know that the hardships

were not in vain nor the sacrifices wasted.

Someday our children, and theirs, will go swinging down the road as we
did, heads high and light of heart — happy in their birthright and proud

of their heritage.

For the road is always with us. It is our history. May it always lie through

peaceful and pleasant lands.
