and add one egg at a time, con-
tinuing to beat after each addi-
tion 'til smooth. Add flavoring,
stirring well. Sift together flour,
baking powder and salt and stir
into the creamed mixture 'til
smooth. Divide dough into three
parts for easy handling. Roll
out each on a lightly floured
board,' sprinkle with almonds,
roll up and place on a greased
baking pan. Place the next two
rolls in, allowing a little space
between for expansion. Brush
the tops with a little sugar and
water mixture, or sweetened
fruit juice for a glaze, and bake
30 to 35 minutes at .375 deg. F.
or 'til lightly browned. Cut into
diagonal or straight slices an
inch wide, in the pan, while
hot. Let cool. Remove with a
pancake turner placing the cut-
sides up, and return into oven
for a few minutes to toast or
dry. Or slip under broiler flame
for a few minutes, being watch-
ful lest they burn too rapidly.
Turn to brown if desired. These
keep well for weeks in a cov-
ered metal container. Variatiohs
can be made by adding cocoa-
nut shreds and/or bits of
chopped candied fruit to the
rolled out rectangles before
rolling up.

Saute diced onion in hot
melted schmaltz for 2 minutes be-
fore adding the prepared . celery,
green pepper, raw carrot. Stir
while cooking over moderate heat
for 5 minutes. Add bread crumbs
and prepared mushrooms. Stir 1
minute longer over increased
heat. Beat eggs in a mixing bowl.
Add the .cooked mixture, stirring
lightly, then add seasoning as
soon as slightly cooled. If mix-
ture is too dry, stir in 1/2 cup
chicken broth or hat water, or
any fruit juice available. This
amount should be sufficient to
fill a 6-pound chi-ellen, capon,
midget turkey or -duckling. For
stuffing a larger fowl or turkey,
increase the ingredients accord-
iney.
Variation: Add 1/2 cup finely
cut dry prunes, or diced tart ap-
ple plus 3 tablespoons brown
sugar and a dash of nutmeg or
cinnamon.
Variation 2: 1 cup cut roasted
Chestnuts may be added to Basic
Recipe or variations.
This dressing may be baked in
a casserole. Roast the poultry
until 45 minutes of complete
roasting time before placing the
Casserole Dressing in the oven.
Turn up heat to 350 deg. F. till
nicely browned. Serve from cas-
serole at table.
