3 tablespoons vanilla extract
6 cups sifted flour
3 teaspoons baking powder
1 teaspoon baking soda .
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon allspice
1/2 teaspoon nutmeg
1/2 teaspoon cloves, optional
2 cups dark brown sugar
1 cup dark molasses
1 4 cup brandy

If a glaze is desired, prepare
the following to pour over
cakes:

1/2 cup honey or dark syrup
IA cup water
3 tablespoons brandy

Combine and brush over cakes
which have been cooled. Return
to the oven on a cookie sheet.
Bake 10 to 15 minutes longer at
275°F. The glaze may be brushed
on several times during this ad-
ditional baking with -good re-
sults. When cold, be sure to wrap
cakes separately in aluminum i•
foil, before returning to tins or •
pans that have been carefully
washed and dried. Wrap cakes
with aluminum foil for storing
and ripening for about two
weeks before . cutting and serv-
ing.
Yields 4-pound tins of fruit
Cake, weighing much more. Or
4-loaf fruit cakes.

Be sure to squeeze out all
liquid from the grated raw pota-
to before measuring. Add egg,
grated onion and raw carrot - and
sift in the flour and salt, stirring
to make a consistency heavy
enough to drop from a table-
spoon. He'at shortening or oil in
a heavy frying pan and drop a
tablespoonful of the mixture in
to form 3 inch pancakes. Cook
over moderate heat in shorten-
ing deep enough to almost cover
the pancakes for crisp, well fried
latkes. Turn with a fork when
brown on underside to brown
tops or underside of pancakes.
Lift out of fat and drain on a
double fold of paper towel. Keep
latkes warm in oven with door
open if many are to be fried.
This amount yields 6 to 8
latkes, averaging 2 portions.
Double and triple this recipe for
corresponding yield. Serve with
gravy, applesauce or cranberry
sauce for meat and poultry,
meals. Or, sour cream and
cheese, with or without apple-
sauce or cranberry sauce for fish
dinners.
Grated Potato Kugelach
(Individual Puddings)
Use the proportions listed for
Grated Potato Latkes and add 1
teaspoon of melted shortening,
preferably schmaltz, pouring it
into the mixture hot and then
turning the batter into well
greased muffin pans. This
amount should make four 3-
inch muffins or Kugelach, ap-
proximately 2 servings with meat
gravy.
