Foods to Remember

Liver Knaidlach

2 tbls. chicken stnaltz or shortening.
3 medium sized onion, diced fine.
2 slices Challah. diced & dried, in oven.
;4 lb. chicken liver, broiled & chopped.
Salt & Pepper to taste.
2 eggs.
1 tablespoon minced parsley.

Lightly brown diced onion in
hot schmaltz or vegetable short-
ening, while the diced Callah
(or other bread) is drying in
oven. Combine all ingredients in
the order listed. If the mixture
is too soft to form into walnut
size balls, add a little dry bread
crumbs. If too dry, add a little
soup stock to achieve the right
consistency. Grease the palm' of
left hand with ., small spoon-
fuls of the mixture, form into
bails. Drop these into boiling
clear soup, or slightly salted
water. Cook 10 minutes. If cook-
ed in soup, serve immediately.
If cooked in boiling water, skim
out with a slotted or perforated
spoon, drizzle with hot schmaltz
and dust generously with
crumbs. Slip under the broiler
flame to brown lightly and serve
as a garnish for poultry or meat
dishes. Yield: 12 Knaidlach.

Goldstein Picked for
Basketball Honors

Ralph Goldstein, University of
Detroit's flashy guard, has been
selected by a national magazine
for all-sectional honors for the
coming season. Detroit is in the
Missouri Valley conference and
the independents in. the Mid-
lands.
As sophomore last year, Gold-
stein was part of guard com-
bination which now rates as one
of the best outer court pair in
the Missouri Valley. Standing
5'11" at 165 • pounds, .Ralph's
teammate at guard is Dan Hal-
ling, a 5'10" speedser from Chi-
cago.
A shifty floor man, Goldstein
was . second in the scoring col-
umn on the Titan squad last
year with 343 points, and he
received honorable mention in
the rugged basketball loop of
the Missouri Valley conference.
Goldstein is expected to be
a leading spark in the Titans"
bid for the conference title, and
this year's basketball .race in'the
Missouri Valley conference looms,
as one of the toughest in the
country with Wichita and St.
Louis rated the top contenders
