SPICE-NUT SPONGE CAKE
1 box Manischewitz Sponge Cake mix
1/4 cup Manischewitz Concord Grape
wine
2 teaspoons Manischewitz cinnamon
IA, teaspoon Manischewitz ginger
6 eggs
1/2 cup coarsely chopped walnuts
Separate the eggs. Allow to reach
room temperature. Beat egg yolks and
wine together until pale and fluffy (2
minutes at high speed on an electric
mixer). Mix the spices with the sponge
cake mix. Add gradually to the egg
yolks and mix until smooth (41/2-5 min-
utes on an electric mixer). Beat egg
whites until stiff enough to form a
firm peak. Fold beaten whites and
chopped nuts carefully into the bat-
ter until no unmixed whites are visible.
Pour into ungreased 9" tube pan and
bake in a moderate oven (340 deg. F)
for one hour and ten minutes. Remove
from oven and invert pan until cake is
cool. Loosen sides with a straight knife

and remove from pan.
FROST WITH HONEY FROSTING
1 egg white
1/2 cup Manischewitz Honey
Heat honey over moderate heat until
boiling. Beat egg white until stiff. Slow-.
ly pour in the hot honey, heating con-
tinuously until fluffy and firm enough
to hold its shape,

HONEYNUT CRISPS
1 /2 cup butter or shortening.
1/4 cup sugar
1 egg
3/4, cup Manischewitz Honey
1 teaspoon Manischewitz Instant coffee
21/2 cups sifted flour
2 teaspoons baking powder
1 teaspoon salt
1 cup finely chopped nuts
Cream shortening. Gradually cream in
sugar. Sift dry ingredients together. Mix
egg and honey together. Add liquid and
dry ingredients alternately to the cream-
ed mixture. Add nuts. Chill until dough
is firm and then form into 3 rolls about
11/2" in diameter. Wrap in waxed paper
and place in the freezer compartment
of refrigerator or a freezer for several
hours or overnight. Cut into thin slices
and place on geased cookie sheets. Bake
in a moderate oven (375 deg. F) for 10-
15 minutes or until lightly browned.
Yield about 41/2 dz.

FISHLETS IN PASTRY
- 1 jar Manischewitz Fishlets drained
1 recipe standard, pastry
Roll out pastry./ very thin. Cut into
2" squares. Place a fishlet in the center
of each square. Bring all four corners
together on top of the fishlet and press.
Bake at 400 deg.F about 20 minutes or
until golden brown. Yield 45.

TEIGLACH
3 eggs
• cups flour, unsifted
1 teaspoon double acting baking pow-
der
2 tablespoons Manischewitz peanut oil
1 lb. Manischewitz honey
% cup sugar
2 teaspoons Manichewitz ginger
3 /4 cup coarsely chopped nuts
Beat eggs and oil together. Mix flour
and baking powder. Gradually beat the
dry ingredients into the egg mixture.
Turn out in a lightly floured board and
knead until smooth. Divide dough into
several portions. Roll each one into 1/2"
thick rope and cut into 1/2" pieces.
Bring honey, sugar, and ginger to a
boil over moderate heat. Drop pieces
dough into honey a few at a time—so
honey never stops boiling. When all the
dough is in, cover and cook over low
heat 20 minutes without uncovering.
Stir and then cook 5 minutes longer, or
until golden brown. Stir in chopped nuts
and turn out onto a wet board. Cool.
Store in a covered container.
