With wintry winds blowing
and the .need for more protein-
packed menus, to say nothing
of a change to the customary
dishes this time of the year,
how. about trying a time-hon-
ored dish of Veal? This recipe
is truly a "company" dish, it is
so pleasing to the eye aS - well
as the palate. Try it on the
family and be convinced. Here
it is:

Veal Scallops with Peas
11/2 pounds lean veal (shoulder cue)
3 eggs
A dash of salt and pepper
1 cup fine dry bread crumbs
1 cup vegetable shortening or oil
1 onion peeled and cut across
2 tablespoons lemon juice
Quartered sprigs for garnish
2 cups heated frozen or canned peas

Cut the veal into cubes as
large as desired. Beat eggs in
a bowl and season to taste
with salt and papper. Drop the
veal cubes into the beaten eggs
and stir well. Lift out cubes of
veal and roll in bread crumbs
till well covered. Heat the
shortening in a heavy frying
pan and place the onion, cut
sides down, into the fat till very
116t then lift out onion halves.
Drop the breaded veal scallops
into the hot shortening and
cook over moderate heat for 15
to 20 minutes, turning till nice-
ly browned on all sides. Lift
out fried scallops and drain
well on paper towels before
placing on a heated platter or
serving plate. Return the onion
to fat till nicely browned and
tender and then use as added
garnish if desired. Sprinkle the
fried scallops with lemon juice,
garnish with quartered lemon
and arrange the heated peas in
small mounds around the meat,
adding a little of the hot short-
ening over top. Garnish with
parsley sprigs. Serves 4 to 5 . .

To go with this hearty dish,
serve some mashed potatoes or

Mamaliga (Cornmeal Mush ala Rumania)
1 cup yellow cornmeal, coarse milled.
1/2 cup cold water
2 cups boiling water
'/2 teaspoon salt
1 tablespoon chicken sehmaltz

Mix cornmeal and cold water
and let stand while water comes
to a boil. Stir the wet corn-
meal into the boiling water, add
salt and fat and continue stir-
ring while cooking over moder-
ate heat till the water Is
absorbed and the "mush" thick-
ened enough to stand away from
the sides of the saucepan. This
takes about 10 or 12 minutes,
Or, as soon as the cornmeal is
thickened, place over hot water
in bottom of your double boiler,
cover and let cook till thick

enough to separate from sides
of pan when shaken slightly.
This is a surefire way of avoid-
ing "shickslach," the little lumps
that may form. Serves 4 to 6.

For an accompanying salad
this time of the year, how about
making grapefruit sections do
the trick? Arrange sectioned
grapefruit on shredded lettuce
or escarole. Place some diced
or sliced unpared apples around
in a swirl pattern, garnish with
parsley or strips, of green pep-
per and pass the salad dressing
at, table. Simple, nicht wahr?
Geviss!
