To Head City of Hope

Nathan R. Epstein was elected
president of the City of Hope
for the 18th consecutive year at
the organization's annual meet-
ing last week.
Serving with him will be Hy-

posed by the federation's nomi-
nating committee for election to
the board as members-at-large
for terms of three years. Elec-
tions will be held at the federa-
tion's annual meeting, 8:15 p.
February 2, 1954, at the Dexter-
Davison Branch of the Jewish
Community Center.

carrot. Add salt to taste. Blanch
the cabbage leaves by covering
them with boiling hot water,
letting them stand, covered, for
2 to 3 minutes or till soft. Drain
well. Place a ball of the meat
mixture in the center of a cab-
bage leaf and roll up, tucking
in the ends tightly. Place each
roll as it is filled in a large,
heavy frying pan or other bak-
ing dish large enough to hold
all the rolls close together. Add
the other ingredients in the or-
der listed, with enough cold
water to cover. Cover the pan
tightly and cook over moderate
heat 30 minutes. Reduce heat.
Let simmer 20 minutes longer
then. bake in a 350 deg. F. oven,
uncovered, for 20 minutes or till
nicely browned on top. Turn
each of the filled rolls carefully
to brown the under sides. If
necessary, hot water may be
added in small quantities dur-
ing the baking period in order
to keep the sauce from cooking
away entirely. DO NOT STIR
the contents of pan at any time.
The Cabbage Rolls cooked in
this manner will not fall apart.
Serves 6.
Variation 1: Add 1/4 cup seed-
less raisins to sauce just be-
fore placing the rolls in the
oven.

To begin with, the customary
Happy New Year Greetings for
1954!
Have you ever stopped to
think what part our food cus-
toms play in our group exist-
ence? Who doesn't recall those
delicious dishes Mother prepared
a-nd served with a sort of cere-
monial air, as if the preparation
and serving were • a ritual? In
truth, those were family rituals.
They form an important part of
what we call "background" in
our modern times. These very
remembrances have kept us
a people, along with other
customs, of course. But the
daily routine of food prepara-
tion and consumption, special
dishes handed down from one
generation to the next, with
some variations according to
family tastes and preferences,
are what is remembered even
when other customs are forgot-
ten, almost forgotten. Kugel,
Knaidlach, Kasha, Knish e s,
Kishke—many, many other mor-
sels like these mouth-watering
specialties of our Grandmothers'
Day, are remembered when Kid-
(lush and Kaddish have faded
and almost disappeared. This
is not an argument in favor of
excluding all other dishes for
which we have acquired a fond-
ness in this modern day and
age. BUT it is a plea to you
homemakers to give these time-
honored culinary customs of
our people their proper and
well-deserved place in family
living. Your children will love
you for it, too.
