It
is understood, of course, that all fresh fruits and vegetables
are included in the Passover meals. In fact, a well balanced diet
need not be 'discarded •just because of Passover "goodies" and the
substitution of Matzo and Matzo derivatives for the year round
leavened items. For this reason we suggest the following two
"miIchig" dishes:

Passover Popovers •
1 cup Matzo Cake Flour
1 cup boiling water
Ys teaspoon salt
5 eggs
1 tablespoon melted shortening
ombine the Cake Flour, boiling water

tend till cool. Beat in one egg at a
me. Grease muffin pans with the
elted shortening, turn in the batter till
full and bake 1 hour at 350 deg. F.

Sponge Cake Crumbs Pie Crust
1 1/2 cups fine dry sponge cake crumbs
.1 ,f, cup softened shortening
A dash of cinnamon
The sponge cake crumbs should be very
ne and dry. Crush dry pieces of sponge
'Ike (leftovers) with the aid of a glass
■ r or bottle, rolling till the crumbs are
fine as desired. Combine the crumbs
ith the softened shortening, using a
brk for best results. Add the cinnamon
o r flavor while using the fork to make
a smooth mixture. Press mixture evenly
on bottom and up sides of a 9-inch pie
pan and bake 5 min. at 375 deg. F. or till
lightly browned at the edges. Let cool
before filling.

1 cup undiluted orange juice
10 Matzos
4 eggs, separated .

1 /4 cup sugar
3/4 cup honeY

11/2 cups preserves (strawberry, rasp-
berry, etc.)
2 cups grated tart apple,.tightly packed
1/2 cup finely ground almonds
1/2 cup Matzo Meal mixed with
1/2 cup sugar and 2 tablespoons cin-
namon
1/4 cup brandy

Passover ingberlach (Ginger Confection)
cup honey
1 cup sugar
2 eggs, beaten creamy
1 cup Matzo Meal
-1/2 cup ground almonds or walnuts
(ground very fine)
1 tablespoon ground ginger
Stir honey and sugar together in a deep
saucepan and bring to a quick boil.
Cook over moderate heat 10 minutes or
till it is a golden colored syrup. Remove
from heat. Combine the other listed
. ngredients with a fork and dump into
the syrup all at once, stirring well.
Place over moderate heat and eook
approximately 10 minutes, stirring con-
stantly to prevent sticking to the pan.
The consistency shotald be thick enough
to adhere to sides of saucepan and the
color reddish-golden. Turn the mixture
out on a wet board and flatten with
the bowl of spoon to 1/2 inch thickness.
D ip the spoon in cold water to prevent
s ticking. Dust with additional sugar and
g inger if desired, and let cool before
utting into inch squares or diamond
s hapes. Or, Cut into 1/2 inch strips then
oll each strip before cutting to any
ength desired.
Variation: Substitute 1/2 cup grated
- aw carrot, tightly packed, for the nuts
and follow basic recipe procedure.
Chopped nuts may be included 'in the
ngredients listed. Grated whole cooked
b eets may be used in place of grated
c arrot with or without chopped nuts.

Farmer Cheese Casserole
1 pound Farmer Cheese
3 eggs, separated
pound sweet butter
1 teaspoon salt
1 teaspoon sugar'
'Ai teaspoon cinnamon
Mash the cheese well with a fork in a
mixing bowl. Beat egg yolks and stir
in thoroughly. Melt the butter in pud-
ding dish or shallow casserole while pre-
heating the oven and turn the melted
butter into cheese mixture, Stir well.
Beat egg whites with salt till stiff enough
to hold a peak. Fold in sugar and cin-
namon and then work in with an over
and over motion ot; mixing spoon till
combined with the cheese mixture. Turn
into the buttered pudding dish or cas-
serole and bake 30 minutes at 325 deg.
F. or -till lightly browned. Serve hot.
Serves 4.

Stir in Matzo Meal. Beat egg whites stiff
and fold in. Butter a pudding mold.
Whip heavy cream stiff and fold into
the carrot mixture. Bake 40 minutes at
325 deg. F. linmold just before serving.
Serves 4 to 6.
