In hot weather be sure to serve
plenty of cheese-plain, creamed
or combinations that please. Cot-
tage cheese or pot cheese is the
simplest form of cheese because
it requires no special curing or
aging process. Its origin dates
back to the earliest centuries of
mankind's experiment with milk
and milk products. It is regard-
ed as a seasonal basic food,
undoubtedly because milk has
always been in superabundant
supply in this season of the
year. It can be served in differ-
ent ways, in accordance with
family or group culinary custom,
or without embellishment.
Here are a few suggestions
that are most welcome during
September, but good any time of
the year:

COTTAGE CHEESE 'MOUND
Hungarian Style

2 cups dry cottage cheese, put through
a fine sieve
1 cup butter or margarine, creamed or
softened
1 tablespoon caraway seeds, pounded
or crushed
1 tablespoon minced capers
1 tablespoon minced chives or green
onions
1 tablespoon dry mustard
14 cup chopped or mashed anchovies
Paprika and parsley sprigs for
garnish.

Combine the cottage cheese
with half the softened butter.
Mix the remainder of the soft-
ened butter with the crushed
caraway seeds, minced capers,
chives, dry mustard and ancho-
vies 'til well combined. Stir this
mixture into the cottage cheese
and butter as lightly as possible
and form into a mound in the
center of a serving plate or
platter. Garnish with sprinkles
of paprika on top and sprigs of
parsley around the base. Serve
with thinly sliced salted rye
bread, whole wheat crackers or

Ernest R. Breech, executive
vice-president of the Ford Motor
co., in a four-point policy state-
ment regarding Ford action in
regard to the OPS price ceiling,
stated that the "Ford Motor Co.
will maintain its policy of sell
ing at the lowest possible price
consistent with the cost of its
products."
Definite information on Ford
price ceilings, Breech added,
must await further action on
passenger car ceilings by the
OPS. in accordance with t h e
Capehart amendment to the
National Production Act.

Israel in the last two and one-
half years were members of the
Hashomer Hatzair, it was re-

hand, just in case "company"

sation. Something that does not
take much time in preparation
and looks like a caterer's dream.

PINEAPPLE ICE BOX CAKE

3/4 cup butter
1 cup tightly packed confectioner?
sugar
4 egg yolks
4 tablespoons lemon juice (about I
lemons)
4 egg whites, beaten stiff- with !-
pinch of salt
2 cups well drained carted crushed
pineapple
Lady Fingers as required or equiva-
lent "fingers" of sponge cake.
Maraschino cherries cut into halves
for garnish
Fresh mint leaves for garnish

Cream the butter and confec-
tioners sugar in a mixing bowl.
Add the egg yolks and continue
beating or creaming for three
minutes. Stir in the lemon juice
and fold in the stiffly beaten egg
whites very carefully, using an
over and over motion of the mix-
ing spoon or fork. Stir in the
well drained crushed pineapple.
Arrange Lady Fingers or sponge
cake cuts on the bottom of a
square cake pan, 8x8x2'z inches
that has been lined with alumi-
num foil or wax paper. Turn in
the mixture to a depth of 1 inch
and cover with split Lady Fin-
gers. Add more of the pineapple
mixture and top with Lady Fin-
gers,- whole or split. Chill for 24
hours . in the refrigerator. When
ready to serve, place a large flat
serving plate over the pan and
invert to unmold. Arrange the
cut Maraschino cherries in any
desired design and add fresh
Mint leaVes here and there for
color. Serve with a topping of
whipped cream if desired and
Maraschino garnish. Cut with
a- cake knife or server into nine
square cuts, or 16 smaller cuts.
Serves' 9 or 16, depending on size
of portions.
