For the housewife seeking a variety of Latkes recipes to vary Hanukah meals, the Kosher Food Company offers the follow- ing: ISRAELI LATKES 2 cups sifted all-purpose flour 1 teaspoon salt 2 teaspoons sugar 1 cup warm water AlA, package dried yeast 1 egg, well beaten 1/2 cup Rokeach salad and cooking oil Mix and sift dry ingredients into mixing bowl. Sprinkle yeast over warm water. Stir until dissolved. Add, with well beaten eg- g, to flour mixture. Mix until well blended. Cover. Put in warm place to rise. Let rise 2 hours. Heat Rokeach Oil in skillet. Drop yeast batter by table - spoonfuls into hot oil. Fry about 2 min- utes or until golden brown on one side. Turn and fry about 2 minutes to brown on other side. Drain on absorbent paper. Serve latkes with sugar, a mixture of cin- namon and sugar, or warmed Rokeach honey. Serves four. * * * P OMPUSKES 1 cup ( 1„;; lb.) cottage cheese 1 cup grated apple 2 eggs 1 cup sifted all-purpose flour 11/2 teaspoons sugar 3/4 teaspoon Rokeach cinnamon % teaspoon salt 1 teaspoon baking powder 3/4 cup thick sour cream V2 cup Rokeach shortening Combine cottage cheese, apple and eggs in mixing bowl; beat with rotary beater until well blended. Mix and sift flour, sugar, cinnamon, salt and baking powder. Stir into cheese mixture. Add sour cream, mix well. Heat Rokeach shortening in heavy skillet. Drop cheese batter by table- spoonfuls into hot fat. Fry over medium heat, three minutes or until golden brown. Turn and fry about three minutes longer to brown other side. Drain on absorbent raper. Serve hot with sour cream, honey or a m ixture of cinnamon and sugar. Makes about 16 medium-sized Pompushkos. * * * APPLE LATKES 1 cup sifted all-purpose flour 1 teaspoon baking powder 1 /2 teaspoon salt 1 egg separated 1 tablespoon Rokeach honey 1 tablespoon Rokeach salad and cooking oil cup milk 3 medium-sized cooking apples 1/2 cup Rokeach shortening Mix and sift flour, baking powder and salt into bowl. Combine egg yolk, honey. salad oil•and milk. Add to dry ingredients. Blend well. Beat egg white until stiff, but not dry. Fold into batter. Pare and core apples. Cut apples, across width, Into %-inch thick slices. Soak slices, until ready to use, in water to which juice and rind of one lemon has been added. Heat shortening in heavy skillet. Drain apple slices. a few at a time. Dip into batter. Fry batter-coated apple slices in hot fat, over medium heat, about three minutes or until golden brown. The order was directed against the Kirk Lucas Employ- ment Agency, which asked a prospective employee whether he spoke Yiddish at home. The Commission revealed that pre- viously it had settled by agree- ment 1,804 cases of complaints of discrimination in employ- ment, including an earlier case involving the Kirk Lucas Agen- cy. 8he complaint was made by John W.
