Groucho Spills Family Secret;
It's Not Beans, But Mushrooms

Here is what Groucho Marx,
star of the quiz show, "You Bet
Your Life," had to say when I
asked him what his favorite
recipe was:
"Every family has a favorite
dish which has been passed
down from generation to

The favorite
dish in our case,
is 'Mushr ooms
Under Glass,'
and it's been in
t h e family for
years. Of course,
by this time the
mushrooms are
Groucho Marx pretty mouldy,
and to keep the neighbors quiet,
we keep the dish buried in the
backyard. -
"Now, the first step in prepar-
ing mushrooms is to find some
mushrooms. If you can't find
them, do the next best thing .. .
buy some. There are various
ways you can get mushrooms in
the grocery store; in cans, jars,
in bulk and when the clerk isn't
looking. But the true mushroom
lover insists on handpicking the
delectable fungi in its native
state, which is either Maine or
Idaho.
"The common mushroom is
found in fields, pastures or cel-
lars, and is recognizable by its
pileus. The pileus is convex,
fleshy, dry and white with a
tinge of yellow or brown; and is
smooth or scaly on the upper
surface. While it's fairly simple
to recognize the mushroom from
the foregoing description, an
even simpler way is to read the
label on the can.
"So far as I know, Uncle
Julius has the only certain way
of distinguishing between the
poisonous and non-poisonous
species of mushrooms. First, he
make an appointment with his
dentist for the following day,
and then he eats the "mush-
room" in question. If he keeps
the appointment with the den-
tist, then the mushroom is the
non-poisonous variety. The
beduty of this test is its 'sim-
plicity — he'll never make the
same mistake twice.
"Now that we can tell a mush-
room from a living room, let us
proceed with the preparations
for 'Mushrooms Under Glass.' I
want to caution all of you with
regard to following a recipe. It's
not as simple as it might seem.
For instance, I once used a
recipe book to make beef stew.
I boiled it for four hours, and
believe it or not, it still tasted
like a recipe book.
"So follow these directions
carefully. Here they are: Take
two tablespoons of butter which
has been creamed. Add one-half

tablespoon of lemon, drop by
drop. Salt and pepper to taste,
and then add one-half teaspoon
minced parsley. Now you have
the sauce.
"Next, cover the bottom of an
individual baking dish with a
circular piece of toast three-
eighths of an inch thick, wet-
ting the under side with half
the sauce already made. P i 1 e
mushroom caps, cleaned and
peeled, on the toast and pour
over them the remainder of the
sauce and one-quarter cup heavy
cream. Cover with glass and
bake in a quick oven (400 to 500
degrees Fahr.) about 25 minutes.
The mushrooms must be served
hot and with the glass cover on.
"As I have said, Mushrooms
Under Glass has always been a
family favorite, and Uncle Julius

invariably prepares this delicacy
when he is expecting guests for
dinner. By a simple twist of the
recipe Uncle Julius has solved
the 'how-to-get-rid - of - guests'
problem. He grinds up the glass
and sprinkles it in the mush-
rooms. This is known as 'Glass
Under Mushrooms.' One serving
will discourage the most fastidi-
ous gourmet."
