These are some of the many
garnishes which have become
popular with cold beet borscht,
making this dish a summer
favorite in Jewish homes.
Shown on the lazy susan, as
photographed in the I. Rokeach
test kitchens, are whipped sour
cream with horse radish, diced
cucumber, hot boiled potatoes
rolled in parsley, sliced hard
cooked eggs, chopped scallions,
sour cream with chopped fresh
dill and water cress.
As a cooling' and different
summer starter, try adding one
cup of buttermilk to a jar of
borscht and beat well. Chill
and served as a first course.
For another treat, combine a
jar of borscht with 1 cup of
chopped cooked cranberries and
one-half cup sour cream. Chill
and garnish with additional
sour cream.

Epstein Returns Snub
Of London Academy
LONDON (JTA) - American-
born sculptor Jacob Epstein has
snubbed the Royal Academy,
just as that stronghold of con-
servatism in art snubbed him
years ago, Reuters reported.
The 70-year-old artist explain-
ed why he has turned down an
academy invitation to submit his
work to the academy's summer
show.
"The Royal Academy has op-
posed me all my life and at-
tacked my work. That is the rea-
, son why -I did not send my work
to the exhibition. Now, at the
.end of my life, they come and
r beg me to come to the Royal
Academy-and that speaks for
itself," the sculptor said.
