RECIPE OF THE WEEK

Everybody wants to get into
the, act! Everyone is thrilled with
the new Chiffon Cake and is
dreaming up new ways for serv-
ing it. Here's a recipe that was
described as "super" by several
(men) tasters:

2 cups sifted all purpose flour
1 ,h cups sugar
3 tablespoons baking powder
1 teaspoon salt
1 /2 cup Mazola oil
7 egg yolks
3/4 CUP cold water
2 teaspoons. vanilla
1 teaspoon almond extract
7 egg whites
3 h teaspoon cream of tartar.

Sift the first four dry ingredi-
ents into a large bowl. Make a
well in the center and put in it
the oil, yolks, water and flavor-
ings. Beat with a spoon until
smooth. Put the egg whites and
cream of tartar into a very large
bowl and beat until stiff peaks
are formed. Pour the flour mix-
ture over the egg whites, and
fold gently until combined. Pour
into a 10-inch ungreased tube
pan. Bake at 325- deg. F. for 55
minutes and then at 350 deg. F.
for 10 minutes. Turn pan upside
down, resting on a funnel or
smaller cake pans, to cool. When
thoroughly cool, remove cake.
Empty a can of freestone peaches
into a bowl. Crush them and
add 1/4 cup of brandy or rum;
chill. Whip 1/2 pint of sweet
cream and sweeten it with 2
tablespoons o f confectioner's.
sugar.
The cake can be cut through
the center (so that you'll_ have
two ring cakes) and served on a
cake plate with the cream and
peaches combined and spread
over the top or you may cut thin
slices from this large ring cake
and pour the crushed peaches
over each slice, garnishing with
the whipped cream. Store left-
over cake on a covered cake plate
and it will remain fresh and
tender for ten days.
