sonrure,

-milchig" Ingenuity

A Jewish wit once gave as one of
the requirements of his bride-still-
to-be-found that she be an expert
in preparing "milchig" meals.
Said this epicure: "Anyone can
serve a square meal when there's
meat on the menu. It takes a magi-
cian to do it without meat."
Slightly exaggerated, of colirse,
but indicative of how some males

feel about the subject! The Heinz
Home Institute, therefore, offers
the recipe below to all who would
qualify as "milchig magicians."

Quick Mushroom Sauce
2 tablespoons butter
tablespoons flour
3
11-oz. can •Condensed Crean*
1
of Mushroom Soup
% cup water
Melt butter. Remove from heat
and add flour. Blend well. Add
soup and heat well. Add water
and heat, stirring constantly, until
thoroughly blended. Serve over
fish, egg or cheese dishes. Yields
2 cups.
