Mock Fish Balls

Cream Puffs

1 stalk celery
• lb. carrots
lb. onions
Raw white meat of a chicken
• cup Manischewitz's Matzo Meal
2 eggs. well-beaten

Slice fine half the carrots, onions, and
celery, and place in kettle. Put other half
of vegetables and chicken through a meat
grinder, then into. a chopping bowl, and
while chopping, gradually add eggs and
matzo meal. Dip hands in cold water, and
roll balls from the mixture. Place them
in the kettle with the sliced vegetables,
and fill kettle with cold water. Cover and
boil slowly 3 to 4 hours. One hour before
removing from the fire season to taste,
and when done, let cool, then remove
balls carefully.
Soup Macaroons

2 eggs
q tsp. sugar
tsp. salt
tsp. .Manischewitz's Matzo Meal
A few walnuts ground fine

Mix egg yolks with sugar, salt, matzo
meal, and walnuts. Fold in the egg
whites, beaten stiff. Drop by teaspoonfuls
into deep hot fat. Place in soup at table.
Liver Knoedel

1-2/3 cups Manischewitz's lklatzo Meal
1 1/2 cups boiling water
10 lb. liver
3 eggs
1 roasted onion
4 tbsp. fat
1 tsp. salt
tsp. pepper

"During the war years, Jewish
farmers in the United States like
all American farmers toiled and
sweated to do their bit. In slort,
they gave their full. measure of
work and devotion to the nation's
cause." So says the 46th annual
report of the Jewish Agricultural
Society just issued by Dr. Gab-
riel Davidson, its executive head.
The report tells of the activities
carried on by the society to ex-
pand and strengthen the Ameri-
can Jewish farm class. It also
deals with the Society's work to
help establish in farming those
veterans, displaced workers,
White collar men and others who
see in farming a means of liveli-
hood.
The report points out that in
the last 10 years, over 10,000 peo-
ple sought the society's advice
and that. the society was respon-
sible for the establishment on
farms of almost 1,000 Jewish
families directly, many more in-
directly. Last year the Society
dealt with 569 farm seekers—of
whom 145 were veterans.
Since its founding The Jewigh
Agricultural Society has granted
14,629 loans aggregating over
$10,000,000 to Jewish farmers in
40 states. During 1945 its loan
grants aggregated $188,231 to
farmers in 11 states.

60,000 Polish Jews
To Leave USSR in April

MOSCOW (JTA)—Sixty thou-
sand Polish Jews will be repatri-
ated from the Soviet Union this
month and the remainder will re-
turn to Pola , d in May, it was
announced here by the Committee
of Polish Jews in USSR.
A total of 9,000 packages for
Polish Jews in the USSR are still
lying in post offices because they
cannot be delivered to addressees
who have been repatriated, it was
reported.

Dr. Schwartzman Dies
LONDON, (JTA) — Dr. Moses
Schwartzman, prominent physi-
cian and radiologist, died here at
the age of 65.
Born in Odessa, Dr. Schwartz-
man served as a chairman of the
executive of the Odessa Jewish
Community from 1918 to 1920.
He was the first radiologist on
the staff of " the London Jewish
Hospital and was active in a
number of health organizations
including the OSE. He was also
a member of the Action Com-
mittee of the World Zionist Or-
ganization.

Bring water and fat to a boil, then pour
in meal and salt, and continue to cook
and stir until dough- no longer sticks to
pan. Remove from fire, add unbeaten
eggs one at a time, beating in each one
thoroughly. Drop by tablespoonfuls on
greased sheet, and bake for 25 minutes at
450 degrees, then for about another 45
minutes at 325 degrees,. or until crisp
through. This amount will make 12 puffs.
When cool, slit puffs along one side, insert
about a tablespoon of filling, and sprinkle
with powdered sugar.
Filling for Cream Puffs

2 eggs
=!4 cup sugar
1 tbsp. potato flour
1 tsp. butter
1 lemon
1 cup water

Beat eggs well. Mix sugar and flour, then
add to eggs, beating in- slowly. Add lemon
juice, butter, and water. Cook in double
boiler until thick, and wher. cool insert
in shells. If filling is forced into puffs
through a small opening with a pastry
tube, double the filling recipe, as the
shells hold more when not slit.

:3 Manischewitz's Matzos
2 eggs
6 tbsp. sugar
2 tsp. cinnamon
4 tsp. grated lemon rind

Soften matzos in milk or water, then cut
into fourths or eighths. Dip into beaten
eggs and fry in butter until brown. Mix
together sugar and cinnamon and sprinkle
over hot matzos. Sprinkle lemon peel on
top and serve.

Mock Noodle Pudding

lb. prunes, cooked and seeded
4 Manischewitz's Matzos
1 cup sugar
4 eggs
1 cup Manischewitz's Matzo Meal
1,f.3 tsp. salt

Soak matzos in cold water until soft,
then squeeze out excess water. Add sugar,
beaten eggs, salt, and meal. Take a little
of this dough and flatten it out on palm
of hand, put a prune in center, and cover
with another oval of dough. Press edges
together, roll in matzo meal, and fry in
deep. fat at 375 degrees until brown. Drain
on brown_ paper, and sprinkle with pow-
dered sugar.

Crullers

4 cups Manischewitz's Matzo Meal
1 cup fat
2 cups water
10 eggs
2 tsp. salt

4 Manischewitz's Matzos
3 eggs
5 tbsp. butter, melted
4 tbsp. sugar
tsp. salt
• tsp. cinnamon
lb. chopped walnuts
3 apples sliced very thin

Break matzos into strips, pour boiling
water over them, drain immediately, and
let cool. Mix with well-beaten eggs, salt,
3 tbsp. sugar, and butter. Put half of this
mixture into a greased pudding dish, then
walnuts and apples, with cinnamon and
remaining tablespoon of sugar sprinkled
over apples. Put the other half of the
matzo mixture on top, dot with butter,
and bake in a moderate oven about one-
half hour.

Quick Potato Pancakes

Bring fat and water to a boil, then add
salt and matzo meal. Let mixture cool,
then add well-beaten eggs, and knead.
Grease . hands and roll balls of about 2-
inch diameter. Make a hole in center with
finger, after placing balls on greased
sheet. Bake in hot oven (400 degrees)
for about one-half hour. Roll in powdered
sugar.

Cauliflower Fritters

Matzos Dipped in Eggs

Bake liver, and when cool grind it to-
gether with roasted onion. Pour 'boiling
water over matzo meal, let cool; then
mix thoroughly all ingredients, and roll
balls the size of a walnut. Put into boiling
soup or salt water and let cook 20 min-
utes. This recipe makes about 24 knoe-
d els.

Prune Fritters

1 cup water
Ii cup fat
1 cup Manischewitz's Matzo Meal
lz tsp. salt
4 eggs

1 small head cauliflower
cup Manischewitz's Matzo Meal
2 eggs (beaten)
1 tbsp. chicken fat
'h. tsp. salt
14 tsp. pepper

Boil cauliflower in salt water until tender,
then drain, and mash well. Add remain-
ing ingredients and beat thoroughly. Heat
a little fat in a skillet, and drop fritter
mixture into it by tablespoons. Fry until
brown on both sides. This recipe makes
8 fritters.

2 cups mashed potatoes
4 eggs
1 1: ' cups water
• tsp. salt
1 cup Manischewitz's Cake Meal

Add well-beaten eggs to potatoes, then
stir in water, salt, and cake meal. Mix
well and fry in hot fat until golden brown.

Feather Balls (Alsatian Style)

1 cup chicken fat
3 eggs (well beaten)
IA cup hot chicken broth
1 tsp. salt
tsp. nutmeg (ginger if preferred)
2 cups Manischewitz's Matzo Meal

Cool to lukewarm a cupful of fat from
a stewed chicken, then beat well with an
egg beater. Add other ingredients, ron.. .
balls about size of a walnut, cover them
with a thin cloth, and set aside in a cool
place from 1 to 24 hours. .When ready to
