Mrs. H. Raikow of Florida avenue recently sent us her excellent
recipe for beef tongue.
FRESH BEEF TONGUE
4 lbs. fresh beef tongue, cold water to cover
1 clove minced garlic
1 sliced onion
2 bay leaves
10 peppercorns
1 tsp. salt
Vegetables to add:
1/2 cup diced carrots
1/2 cup diced celery
3 sliced onions
4 cups strained liquid
Combine all ingredients and bring to a brisk boil. Reduce heat
and simmer for 11/2 hours. Remove tongue from liquid, remove skin
and trim. Strain the liquid and reserve. Place the vegetables in a
roasting pan. Top with trimmed tongue, add strained liquid, cover
and bake till tender for two hours at 300 degrees. Serves eight.
