BLINTZES Wrappers: 2 eggs ',/2 cup flour 6 oz. water Beat eggs well, add all flour at once. Beat smooth, slowly add water. Heat small skillet and grease lightly. Pour in enough batter to make very thin sheet, tipping pan to cover bottom. Fry until edges curl or brown, turn out on tea towel. Filling: 1 lb. farmer or cottage cheese 1 egg sugar or cinnamon to taste Put cheese through sieve, add egg, sugar and cinnamon. Place tablespoon of cheese mixture in center of each wrapper, fold into envelopes so that cheese will not escape and fry golden brown on both sides.
