Plights Troth

Clironicie Ciihnary Corner

By EDITH GOODMAN

For many years my husband has been asking for pickled fish,
and I confess was unable to obtain a recipe to his liking. After
sampling pickled fish prepared by Mrs. Ben Nadis of McQuade
avenue I was sure this was it. Why don't you try it out?
PICKLED FISH
8 bay leaves
4 pounds of trout
20 pieces of whole alspice
1 ',2 pounds of yellow pickerel
1 lemon peeled and sliced thin
212 pounds of onions
(remove all white substances
111 4 cups'of vinegar
from lemon)
1 11 cup of sugar
Slice fish into small portions, salt through thoroughly. For best
results, leave over night in salt. Slice onions, cover with water and
cook ai of an hour or until tender. Add vinegar, sugar, spices to
onion mixture and bring to a brisk boil.
Place fish in pot and boil evenly for 30 minutes. Taste for sweet-
ness. Cool. Place fish into large bowl or crock and strain gravy over
fish, add lemon and store in refrigerator.
