Matzoth Meat Balls.

Sootless



Cut up any scraps of cooked or
uncooked fat into small pieces,
place in a saucepan, add just suffi-
dent cold water to cover them,
stir often, and simmer with the lid
off till nothing is left of the pieces
of fat but brownish scraps. Strain
into a basin and when cold, a hard
white cake will be formed, which
will keep good some time. This fat
makes excellent pastry and can be
used for frying.

soning, a little chopped parsley,

matzoth meal to form into small
balls the size of a marble. Drop
these into the boiling soup and cook
about fifteen minutes. Test one in
boiling water and if it boils apart
add more meal

eggs and fry by tablespoonfuls in
boiling goose grease. Sprinkle
with powdered sugar and serve
with wine sauce.
